Multi-Grain Tortilla's...Love them

A healthy (mainly) lunch.
These tortilla's are so good, nutty and a bit crunchy from time to time.
And yes, I hoard the honey mustard sauce from Chicfila.  And so do they, you have to ask for extra and it usually is 1...I make myself only use half.  ~sigh
I added turkey and baby swiss cheese.
The itty bittiest bit of olive oil, in my green ceramic skillet Steve wanted to try...Don't bother...not great.  I picked one up at Walmart in the "As seen on TV", area.  It isn't bad with oil or Pam...but when they show the eggs freely sliding around, NOPE...not gonna happen.  And the "green" is coming off in places already.
Add a little Ceasar salad, and lunch is ready...

Good, and good for you...

We have used Naan bread, for pizzas for awhile now.  But lately I have found this whole grain Naan, and it got me thinking.  I have played a bit with this pizza and I wanted to share it with y'all.
I have some oil dipping seasonings, and I added some to olive oil.  I use this on the bread, in place of sauce.  In this photo, you will see I went a bit heavy handed with the oil, it was yummy...but a bit to much.  Less is more~
I made mine a veggie/cheese pizza.  I added a wee bit of low fat mozzarella cheese, red onion, fresh mushrooms, yellow squash, sliced tomato and then a bit more cheese.
 
Pop in the oven for 15-20 minutes at 400 degrees.
I added a small little salad, and this was a very good, and good for you meal...ok, besides the fact I used to much olive oil...Hubby is not a fan of whole grain, so he would rather have the original or garlic Naan.  I think the whole grain bread is really good.  I like the "chew" it gives and it tastes good, and come on 6 or 8 grams of fiber...
While the oven was on, I decided to make some pumpkin bread for the freezer.  I use a combination of white and wheat flour.  All wheat, kind of makes lead bread.  But using the mixture has a great result.  I also used 1/2 cup less sugar that my recipe...so I used a wee bit of sugar, to coat the bottom of the sprayed bread pans.  This give a wonderful crunch to the end pieces and the bottom...yummy...

reflection

I am thinking a lot today how we ebb and flow, changes...some good and some bad.  The differences as we age, oh my gosh...I saw an ad yesterday and found myself in the 50-75 group.  What???  It was for life insurance I think.  Hello, wake up call.

I have talked about anxiety, depression, and how I have felt off and on.  I am in a pretty good place now, with that said...I have more to do.  When I went to my counselor last, she told me to think of where I want to go next...that was my homework, I haven't done it yet.  lol... What sent me to her, has worked itself out, I have done the work to get back on track...I am grateful for the experience now, seeing it has helped me feel "right" again.

I also, find myself finding "the old Kathy" these days.  I was lost for a good while, and didn't even realize it.  I find her coming back, in my reflection now.  [When I was kind to myself and I felt good...I wasn't hiding or masking my feelings.]  Yes, this is related to how I look, I am beginning to see the slimmer me, the old me.  My face is recognizable to myself again in little whispers, I have a ways to go yet.  I see a slimmer face, bigger eyes, leaner, less muffin top...but older.  That's ok...I know I will no longer be THAT girl...I don't want to be. What I want to be is healthy, and to be good to myself.  Thinking enough about myself to eat right, have healthier habits, and go to the gym.  That is for my physical body, practicing Yoga is for my spirit.  I find myself getting to yoga 3-4 times a week, and I almost crave it.  It is good for my soul...I am a work in progress, but moving forward is a good place to be, I am no longer stuck...

Next step is to find something to fill my spare time.  I do want to find a part time job, but I hope this time to be more selective... find something I like.  Until then, this week I plan to investigate volunteer work, of some sort.  I would love to go to the humane society, but the attachment worries me.  We will see.  Onward...

Quick and Healthy Dinner

I am proud of myself this evening.  I cooked, just for me.  When Steve is offshore, sometimes I throw in a Lean Cuisine or something frozen from left overs. 
I had a leftover chicken breast, added onion, asparagus, yellow squash, garlic, whole wheat pasta and olive oil.
Splashed some sesame oil and soy sauce in there too.
And quick and easy...
Yummy...
An after dinner glass of wine would be lovely.  But I don't have any...I guess I will sip a diet Ginger-Ale and dream...

roasted cauliflower

I am so happy I tried this, we have fixed it three times now.  Each time it is a bit better.  I have not added any other flavors yet, but I do plan too.
I break it up a bit into bite (big) sized pieces.  And simply toss with olive oil and Kosher salt and black pepper.
Hot oven, I set mine for 450, but some say 400 to 500 degree's.  I am still playing with that.  I add foil to the pan for 10 minutes, then remove it.  The cauliflower roasts for 30 minutes.  But I would imagine, this is by size of the pieces.  Be careful and check it often.
You may want to leave this part out, I opted for a glass of wine while waiting.  I have pretty much given up wine for ordinary days...and leave it for special occasions, but this evening I wanted a glass.  Or two...  I do not want the added calories, and I have trouble sleeping when I indulge.
Oh my, sweet and nutty...full of flavor.
Please do take notice, the cauliflower does shrink in size, from the roasting.  So plan according to that.  I do hope you try this if you haven't already, it is so good...and very good for you!

150 by 50...

by...
yes, it is true...I have set a goal for myself.  A real, attainable goal...I haven't done this for years.  Can that be true?  Yes, I think it is.
While we were driving from Pa., I had so much time to ponder.  Many things ran through my mind, to many really.  But the number one thing was, "how are you feeling?"  My answer was "could be better";...I will soon (November 18th) be turning 50, Holy Crap, how can that be?  eeekkk...
I have had this extra weight for close to 4 years now, sometimes less than others.  I have lost about 10-12 pounds over that past few months, but have not been 100% on board with a "lifestyle" change.  It is time to get serious and reach my goal of 150.  I do think I will be ok with this weight, now it seems like a huge milestone, but really it shouldn't be.  I have 4 months...lol.  It is a goal, I hope to reach it... At one time I would say 135...those days are over. I am not looking for skinny, just healthy...
Hopefully you will be hearing some reports soon...
Let's do this, please share one tip for healthy eating...
My newest observation is, I quit eating when I am no longer enjoying every bite, wow...this makes a big difference.  I am not saying waste food, but a few left over bites, is nice.  Oh and I ALWAYS use a salad plate.
