Rainy days and Taco Soup

My day started early, cut and color...
I went a half shade darker since it seems a couple weeks in, but hair lightens so much.
I seem to like it...lol...
Came home to the threats of bad stormy weather.  I had a lunch planned with a friend, but neither of us wanted to go if the weather got bad, and boy did it get bad.
Of course Miss Bella was shaking and fretting...so I laid on the loveseat with her, to calm her and before you know it, I grabbed the throw and we were napping.  Well, I was napping...Nothing like the sound of thunder and falling rain.  Soothes my soul.  Even my hubby laid down for a nap.
Then I thought DINNER...
So a quick run to the store for a few ingredients and a stop to the gym.
Home to make Taco Soup.  It is so good...

Taco Soup

  • 1 lb ground turkey or ground beef
  • 1 large onion, chopped
  • 1 (1 ounce) package hidden valley ranch dressing mix
  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) can pinto beans
  • 1 (16 ounce) can chili beans (hot or regular)
  • 1 (16 ounce) can corn
  • 1 (8 ounce) can diced Rotel
  • 1 (8 ounce) can diced tomatoes (any flavor)

Directions:

  1. Brown meat and onions and drain.
  2. Mix ranch dressing and taco seasoning into meat.
  3. Without draining, add all of the other ingredients.
  4. Simmer 1 hour.  Or add to crock pot and cook 8 hours, low.

  1. That soup sounds good...copying and going in my "to try" folder. "We don't have Hidden Valley Ranch in packages in Canada"...rofl...but I'm going to be in the US on the weekend so I'll get me some 'o that!!

    Oh I hear you on stormy days...I love listening to the thunder and the lightning and the rain falling. And a nap on a day like that is just bliss!!!

    That looks SO GOOD!!! Hope you are having a good week..it flooded here, so much rain the past few days, but today has been dry and everything is so green!

    I wish I had a bowl of that soup right now - just had half a wheat bread chicken salad sandwich and a few macadamia nuts. Still hungry. LOL

  3. I almost made this same recipe tonight, but we had too many leftovers to get out of the way first......so tomorrow night. I've not made this is awhile, seems like there are a few little differences in the recipe I have which was given to me by our neighbor. But I know it's a perfect meal for a rainy day!

  4. looks really good! got some avacodo in there too? I may try it, know that Kristin makes it alot, just a bit concerned about the heartburn that may follow? love the thunder storms... rain when it is falling and I can have the windows open~ three days until the year anniversary of all the tornados in western PA... our roof is to be started in 2 weeks or so. xo

  5. Your taco soup looks yummy. I like flavorful foods and this sounds like it is full of good flavor. I have four indoor dogs and two of them are terrified of thunder. If I'm out shopping I try to hurry home because I know they will be miserable. Thanks for stopping by my blog.----------shannon
